Build ships with multiple stages, and jettison parts away. Also pay attention to where the exhaust from the sepratrons goes. Keep an eye out for engine temperatures and fuel levels, and try not to explode. I tend to use them at the top and bottom of each booster (so four per side).

The feature of this type is that after jettisoning a radial stage all remaining tanks are still full so the rocket loses mass more quickly. This repeats until the last radial stage is jettisoned and only the center stage is running. I don't worry about the added weight and do a "just good enough to prevent disaster in most cases" job.
